The Pandoro

I want to tell you the story of the second Christmas dessert:
the Pandoro.

The true history of Pandoro is made of little legend and a lot of truth.
It has a precise date, the date of the registration of the patent, exactly on October 14, 1894 in the name of Domenico Melegatti.

The name sounds familiar because still today one of the companies producing Pandoro is Melegatti.

A few months before the official registration of the recipe, the following announcement appeared in the newspaper:
“The Pastry Chef Melegatti…informs his benevolent and numerous clientele that he has created a new cake for its exquisiteness, lightness, inalterability and beautiful format, the author deems it worthy of first place, naming it Pan d’oro”.

In that moment they were 3 words that then became in one word the name of the Christmas cake that we eat today.

A legend said that Pandoro was the result of a Panettone in which the pastry chef by mistake forgot to include candied fruit and raisins, but this is absolutely not true.

Pandoro is a recipe that originates from the ancient recipe of “Levà”, a dough prepared in the courts that Melegatti has enriched and transformed, even in the shape, adopting the famous star-shaped mold that has always distinguished this delicious cake.
